Lightened Shepard’s Pie

Course Dinner

Ingredients
  

  • 1 pound ground beef
  • 1 cup chopped carrots
  • 1 cup peas
  • 1 small chopped onion
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup beef stock or broth
  • 2 teaspoons Worcestershire eyeball it
  • 1/2 cup frozen peas a couple of handfuls
  • 1 teaspoon sweet paprika
  • 2 tablespoons chopped fresh parsley leaves
  • 1 whole head of cauliflower
  • 2 tablespoons of butter
  • 2 tablespoons of milk (use more or less depending on the consistency that you would like for your "mashed potatoes"

Instructions
 

  • Brown your ground beef in a large pan on the stove top.
  • Add in your onion, peas, carrots, and broth.
  • Let everything simmer together for about 5 minutes.
  • Then transfer it to an oven safe dish & top with your "mashed potatoes".
  • Let it cook for about 25 minutes, or until potatoes have started to turn golden.
  • Steaming a whole head of cauliflower.
  • I want them to easily smush when I press my fork into them.
  • Then you mash them just like you would normal mashed potatoes with a little bit of butter and milk! I actually used a food processor to get an extra creamy texture, but a mixer or blender also works wel
