To make Lightened Shepard’s Pie, brown your ground beef in a large pan on the stove top. I always get the lowest percentage fat that I can with my ground beef. Simmering it in the broth keeps it nice and juicy, plus there are so many other delicious flavors that you don’t miss the extra fat. Add in your onion, peas, carrots, and broth. Let everything simmer together for about 5 minutes. Then transfer it to an oven safe dish & top with your “mashed potatoes”. Let it cook for about 25 minutes, or until potatoes have started to turn golden.
These “mashed potatoes” are the true lightened up portion of this dish. These are actually mashed cauliflower! My mom and I discovered mashed cauliflower when I was in high school and the South Beach Diet was super popular. I have loved them ever since. You get the same creamy, buttery flavor that you get with mashed potatoes without getting overly stuffed full of heavy carbs.
To make cauliflower mashed potatoes, you start by steaming a whole head of cauliflower. It doesn’t make as much as potatoes do, so make sure that you steam enough cauliflower. I steam my cauliflower longer than I would if I were eating them normally. I want them to easily smush when I press my fork into them. Then you mash them just like you would normal mashed potatoes with a little bit of butter and milk! I actually used a food processor to get an extra creamy texture, but a mixer or blender also works well.
You saved with carbs on the “mashed potatoes” which means that you can have a slice of cornbread with it right???

Ingredients
- 1 pound ground beef
- 1 cup chopped carrots
- 1 cup peas
- 1 small chopped onion
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup beef stock or broth
- 2 teaspoons Worcestershire eyeball it
- 1/2 cup frozen peas a couple of handfuls
- 1 teaspoon sweet paprika
- 2 tablespoons chopped fresh parsley leaves
- 1 whole head of cauliflower
- 2 tablespoons of butter
- 2 tablespoons of milk (use more or less depending on the consistency that you would like for your “mashed potatoes”
