Bread is my weakness, especially the yummy coffee cake and danish varieties. I love them! Whenever I am at Starbucks I usually stand there for as long as possible drooling over all the decadent goodness in the pastry case, wishing I could have them all. My day dreaming usually ends abruptly by the pushing and shoving of the caffeine starved line behind me. Apparently I am the only one who does this…I am totally normal right?

You do this too? Perfect. We can most definitely be friends.

Where was I again?

Oh right, this awesome really easy danish. (and yes it is totally drool worthy in case you were wondering).

I have always wanted to try to make a pastry like this. But I have been afraid to attempt my own danish because it just seemed too daunting. So I decided to experiment a little to see just how simple I could make it. I only wish I would have tried sooner. This was one of the easiest dishes I have ever made! I used a good quality blueberry jam for this recipe. The one I used had real blueberry pieces and it gave a perfect fruity bite to the danish. And for the lemon flavor I used a lemon curd. It can be found on the shelf with the jams and preserves at almost any major grocery store. It is very similar in flavor and texture to that of a lemon bar filling (and if you ask me there really is nothing better than an ooey gooey lemon square.) Of course if you didn’t want to buy the jarred variety you could always make your own from scratch.

Here is the real kicker, the dough is a refrigerated pre made pizza dough (the thin crust variety, I used Pillsbury). This recipe also works well with Pillsbury crescent rolls (the seamless kind is best). My husband loved the texture of the pizza crust and it held up so well to the gooey sweet filling.

This recipe is so versatile. You could really do any filling you liked. If you are in a pinch for time you could use pie fillings as well.

Whatever way you make this danish I am absolutely sure of one thing….you are gonna love it!

Ingredients

Lemon Blueberry Danish

  • 1 Can Refrigerated Thin Pizza dough or 1 Can Pillsbury Crescent Rolls seamless variety
  • ½ Cup Lemon Curd
  • ½ Cup Blueberry Jam
  • 1 egg optional

Easy Lemon Glaze

  • Cup Powdered Sugar
  • 1 Teaspoon Milk
  • 1 Teaspoon Lemon Juice

Instructions

For lemon blueberry danish:

  • Preheat oven to 375. Roll out dough onto a piece of parchment paper atop a baking sheet. Using kitchen scissors make 2 inch long cuts (about 1 inch apart) along each side of the dough. Spread the lemon curd over the center of the dough, making sure to leave a little room at the bottom to fold over the dough to hold the filling in place. Next, spread the blueberry jam on top of the lemon curd. Starting from the top fold over each each dough strip over the filling, alternating from each side. Fold the bottom and top ends to seal in the filling. (Optional step: beat 1 egg in small bowl. Brush the top of the pastry with egg wash before baking) Bake for 15-20 minutes or until golden brown. Top with lemon glaze.

Easy lemon glaze:

  • In small bowl mix powdered sugar, milk, and lemon juice. Combine until the consistency is a thin paste.

If you get confused at any point on how to braid the danish then head over to you tube for a quick tutorial. Sometimes visuals are so much more helpful. (It is super simple, I promise!) To get a shiny golden crust on this danish brush with egg wash before baking!
